VeganEgg Omelette by Follow Your Heart

Hello everyone,

Let’s talk about eggs. Even though I’ve only been vegan since 2009, for the vast majority of my vegetarian years, I didn’t eat eggs. The only eggs I recall liking were these odd “scrambled eggs” that my mom made…in the microwave. I know, I know. Eggs in the microwave. I don’t know why she made them that way, and I don’t know why I liked them. I think it’s because it gave them a slightly firmer consistency.

Anyway, the point is, I never really liked eggs. So many pre-vegans are worried about missing all their old dairy favorites, but I never really had that problem. That said, I was never concerned with finding vegan alternatives. I’ve always loved a good tofu scramble since that doesn’t taste anything like eggs.

FullSizeRender copy 2Well after the release of the VeganEgg I decided that I’d give more traditional breakfast
recipes a try. Follow Your Heart even includes a variety of recipes on their website. I decided to try a traditional Italian omelet since my AeroGarden basil has been growing like crazy! (BTW, have I mentioned that I love my Aerogarden? Because I really do! More on that below.)

The omelet was fairly easy to make.You make a large VeganEgg and then pile on your chosen toppings, let it sit for a few minutes, and flip over the omelet.

We opted to include fresh basil, red onion, diced green and red peppers, and Daiya Cheddar Style Shreds.

The result was what I consider to be a fairly tasty vegan omelet. The “omelet” was very fluffy (they recommended using a blender to ‘whip it up’) so it was very light and almost watery. This is the exact opposite of the old microwave eggs from my childhood. That said, my vegetarian partner said it was pretty close.

I’m not sure I’m sold on “close to the real thing” eggs just yet, but I’m glad they exist.

PS – For the holidays two of our close friends got us a Miracle-Gro AeroGarden Ultra LED Indoor Garden w/ Herb Seed Kit. I was shocked and sooooo very happy! I love growing herbs, and I’m always sad when winter hits and all my plants die off. It’s nice to have a ready supply of common herbs like basil, cilantro, or sage.

Setting up the AeroGarden was a breeze. After just a few weeks, our first seed pods sprouted. Honestly, once they sprout, they grow lightening fast! Each week I’ve had to trim the plants down because they are practically touching the grow lights.

AeroGarden is constantly running deals. If you’ve been curious about getting a garden, you have my strong recommendation!  In the long run it will save you cash if you actually use it. Each time you goto the store you can spend $2-4 on one herb packet that will last a week. With the Aerogarden, the herbs are always fresh. That said, I think I’ll go harvest some of my own herbs now!

Stay tuned. Once these pods have run their course, I plan to grow Spring Flowers! Wouldn’t that be nice?
